SWEDISH DOUGHNUTS
1 1/4 cups sugar
2 whole eggs
2 egg yolks
4 Tbsp. whipping cream
3/4 cup milk
4 cups flour
1/2 teaspoon salt
6 tsp. baking powder
1 1/4 tsp. nutmeg
1 1/4 tsp. lemon extract
2 Tbsp. butter, melted
Mix sugar, eggs, yolks, cream and milk with mixer until well blended. Add dry ingredients and mix with wooden spoon until smooth. Add rest of ingredients and mix well. Chill dough one hour. Roll out on floured board and cut with doughnut cutter. Deep fry at 375 degrees until done. Drain on paper towels. May be coated with sugar or cinnamon sugar by placing sugar in small paper bag, adding warm donut and shaking.
Tip: Test the oil by frying up the holes first. These are more fun to eat than the doughnuts!
