PUMPKIN RAISIN CAKE/BREAD
1 1/2 cups all purpose flour
1 1/4 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. baking soda
1 cup dark raisins
1 cup plain canned pumpkin
1/2 cup firmly packed lt. brown sugar
1/3 cup vegetable oil
1 large egg, at room temperature
Preheat oven to 350.
Spray an 8" square pan with nonstick cooking spray.
In medium bowl, stir flour, baking powder, cinnamon and baking soda. Rinse raisins in water, dry, pat dry on paper towel. Stir raisins into flour mixture.
In another bowl whisk remaining ingredients until smooth. Stir dry ingredients into pumpkin mixture just until blended. Scrape into prepared pan.
Bake 35 min, until toothpick inserted in center comes out clean. Let cool completely on rack before cutting into 16 squares. Each piece will contain 146 calories.
