LO-CARB CHICKEN SOUP

Makes 6 servings

Here is a low carb soup that is quick, easy, and high in protein. Only 270 calories per serving, with 11 grams of carbs.


3 Tbs olive oil

1-3 cloves garlic crushed (optional)

1 1/2 onions (cut up to liking)

3 cups of mixed (frozen) vegetables

3 cups of diced chicken (cooked)

2 cans of diced tomatoes ( 14-1/2 oz size)

3 cans of seasoned chicken broth ( 14 1/2 oz size)

3 cups frozen chopped spinach, thawed and squeezed dry

In large sauce pan over medium heat, add oil, garlic and onions; cook until onion are transparent and golden. Raise heat to medium high, add mixed vegetables, and cook until tender.

Add chicken, tomatoes, thawed spinach and broth and bring to a boil. Reduce heat and simmer for 10 minutes.

Season to taste.
