PINEAPPLE SHEET CAKE
2 eggs
2 cups sugar
1 tsp. baking soda
1 can crushed pineapple (20 0z)
2 cups flour
1 cup chopped nuts (optional)
Grease and flour cookie sheet (with 1 inch sides)
Mix eggs, sugar, baking soda and pineapple (including
juice)
Add flour and nuts and beat well
Pour into prepared cookie sheet and bake for 25 minutes
Frost with recipe below
FROSTING
1 1/2 cups powdered sugar
1 package cream cheese (8 oz) at room temperature
1 stick butter or margarine
Cream butter and cream cheese
Add sugar and beat well
Spread on warm cake
