GRANNY CAKE
(Also known as Hummingbird cake)
3 cups all purpose flour
2 cups granulated sugar
1 tsp. baking soda
1 tsp. ground nutmeg
1/2 tsp. salt
1/2 tsp. ground cloves
1/4 cup butter or margarine
3 eggs
2 cups mashed ripe bananas
1 can crushed pineapple (8 oz size)
2 tsp. vanilla
1 cup finely chopped pecans
powdered sugar for dusting
In a medium bowl, stir together flour, granulated
sugar, baking soda, nutmeg, salt and cloves. Set aside.
In a large bowl, beat butter with an
electric mixer on medium speed for 30 seconds or so.
Add eggs, banana, crushed pineapple (including juice) and vanilla, beat till
well combined.
Gradually add flour mixture and beat on low speed for 1 minute, then beat on
medium speed for an additional minute.
Fold in pecans.
Spread batter in a well greased and floured 10 inch fluted tube pan (bundt).
Bake in a 325 degree oven for 70-75 minutes.
(Check for doneness with toothpick)
Cool cake for 10 minutes before removing from pan.
Dust with powdered sugar to decorate.
