KENTUCKY DERBY PIE

You will need 1 recipe Pastry For One-Crust Pie, see recipe below.

3 slightly beaten eggs

3/4 cup light-colored corn syrup (karo)

3 Tbsp. granulated sugar

3 Tbsp. brown sugar

3 Tbsp. butter or margarine, softened

1 tsp. vanilla

1/8 tsp. salt

1/2 cup finely chopped pecans

1/3 cup bourbon

1 (6 oz) package of semi-sweet chocolate pieces

1 1/2 cups pecan halves

 

Prepare pastry for one crust pie. Set aside

For filling: In a large mixing bowl, combine eggs, corn syrup, granulated sugar, brown sugar, butter, vanilla and salt; mix well.
Stir in chopped pecans and bourbon.
Pat chocolate pieces, lightly, onto bottom of pastry shell.
Pour filling atop the chocolate pieces.
Arrange pecan halves atop filling.
Bake at 350 degrees for about 1 hour or till knife inserted in center comes out clean.

Tip: For the last 30 minutes, cover the edges of the pie crust with foil to prevent over browning.

 

PASTRY FOR ONE-CRUST PIE

1-1/4 cup all-purpose flour

1/4 tsp. salt

1/3 cup shortening

4 to 5 tsp. cold water

Blend salt into flour.
Cut in shortening till it resembles course oatmeal.
Using a fork to mix, gradually sprinkle in water with flour mixture.
Knead dough just enough to form a nice ball.
Roll out on floured surface to about 12 inches round.
Carefully fold dough in half, place into pie pan and unfold to cover pan evenly.
Trim to 1 inch beyond edge of pan, fold under and crimp.
Do not prick pastry!
